Tapas and Starters – What to Eat in the Lecrín Valley
Fried aubergines with a drizzle of sugar cane syrup, a firm favourite that you will find in tapas bars and restaurants in the Lecrín Valley and all over the province of Granada.
Easy to prepare at home too, just slice the aubergines thinly, place in a colander in layers, sprinkling each layer with salt. After 10 minutes, rinse under a cold tap and dry on kitchen paper. Thinly coat the sliced aubergine in flour and fry in extra virgin olive oil until golden brown. Drain well and place in a terracotta dish to keep warm. Drizzle with sugar cane syrup or molasses to taste, and you’ll have a really yummy starter or snack. ¡Buen provecho!
We ate these sitting on one of the terraces on the Plaza Bib-Rambla in the centre of Granada. Delicious!
